It's almost spring and you know what that means! Beginner and advanced beekeeping classes have returned at Swan's Honey from Saturday, March 16 through Saturday, March 23. With the Georgia splitting season in full swing, we’re working hard to expand our colonies so we have plenty of nucs available when we return to Maine this spring.
If you’re interested in owning a nuc of your own, then we have good news for you. Our 2023 Nucs list is open!
Each nuc is a five frame starter hive that includes bees, brood, honey, and an established queen all in a reusable plastic nuc box. The price for one nuc is $175 with a $50 deposit (per nuc) required. The deposit will come out of the total price of the nuc.
If you’re interested in owning a nuc, we encourage you to call our store at (207) 437-2251 and get on the list. Pick-up will start at the beginning of May and we’ll call you to schedule a pick-up appointment. The list is filling up quickly and pick-up dates are first come, first serve. The earlier you get on the list, the earlier you’ll get your bees.

]]>With holidays just around the corner, we thought now would be the perfect time to try our hand at honey butter. For this recipe, we used our Raw & Unfiltered Honey smoothed generously over this Serious Eats Quick and Easy Drop Biscuit recipe. To make this delicious spread, simply gather your ingredients and follow the steps below:
Ingredients
½ stick unsalted butter (at room temperature)
1 tablespoon of Swan’s Raw & Unfiltered Honey
½ tablespoon course sea salt
Note!
Depending on your preference, play around with adding slightly more or less honey or salt. If you’re on the sweeter side, add a bit more honey. If you’re on the salty side, consider sprinkling a few extra sea salt flakes into the mixture.
Step 1
Cut the butter into 1-inch pieces. This will make it easier for mixing.
Step 2
Using an electric mixer, whip the butter and the honey together. The result should be smooth and fluffy.
Note!
If you don’t have an electric mixer, try using a whisk. Simply warm the butter in the microwave for a few seconds until soft enough to hand-mix.
Step 3
Gently fold the salt into the honey butter mixture. Scoop the final mixture into a microwave safe bowl or dish (this will make it easier to reheat leftover honey butter).
Step 4
Spread across your favorite baked good and enjoy! For added saltiness, sprinkle a few more sea salt flakes on top.
